Taste of Scandinavia intends to convert the former grocery store at 2900 Rice Street into <br />a bakery and commissary. The facility also will house a retail store (selling bakery and <br />prepared food products) and an office for administrative and accounting staff. The <br />bakery and prepared food products produced in the facility will. be primarily distributed <br />to the Taste of Scandinavia retail/restaurant outlets throughout the Twin Cities <br />metropolitan area. Some bakery products will be sold in the attached retail store and <br />some will be distributed to various wholesale accounts. <br />Incoming food deliveries will decrease substantially from the grocery store that <br />previously occupied the space. Deliveries of food and dairy products used in production <br />will occur no more than twice a day on average. These deliveries will occur between the <br />hours of 6:30 and 8:00 AM. All delivery trucks will enter the service road on the north <br />end of the center directly off of Rice Street. The trucks will utilize an existing loading <br />dock on the north end of the facility. <br />Outgoing food deliveries (bakery products and prepared foods) will occur on a daily basis <br />with all vans leaving the bakery by 4:30 AM. Up to four vans or panel trucks will be <br />used for the outgoing deliveries. These vehicles will be parked behind the facility (to the <br />North) when not being utilized. <br />When fully operational, the bakery and commissary will employ 15 to 20 persons. The <br />bakery will be operated 16 hours a day and the retail store will be open during normal <br />business hours. Parking for these employees will be provided in a designated area to the <br />west of the facility. <br />
