Outside Parking Lot Security <br />i One Ramsey County uniform officer with the possibility of one additional <br />(Works well to have an officer who can speak the 1 -Imong language) <br />2. Inside Establishment Security <br />® Two security staff at entrance door checking IDs <br />(Check everyone who enters regardless of what age they appear to be) <br />d Three security staff inside positioned at all potential "hot spots" where trouble might <br />arise <br />• All security staff must wear shirts identifying them as security staff <br />® All customers must enter and leave from the front door only unless an emergency <br />arises <br />® Carding customers ID's at front door should start at 7:00 p.m. unless a major event is <br />taking place earlier <br />o All security staff should be required to attend an alcohol awareness, proper ID <br />checking, and crowd control training seminar prior to license renewal <br />3. Bartenders and Servers <br />® All bartenders and servers must open all Liquor items i.e. cans of beer, bottled beer, <br />and wine, before handing them to customers or bringing them to customer tables. <br />® All bartenders and servers must card customers prior to security staff starting their <br />carding at front door <br />® All bartenders and servers should wear staff shirts identifying them as an employee <br />O All bartenders and servers should be required attend an alcohol awareness training <br />seminar prior to license renewal <br />® A proper number of servers and bartenders should be on staff to be able to serve their <br />customers timely and with the responsibility of watching for obvious intoxicated <br />customers <br />(Ex: one bartender per 15 customers, one server per 40 customers) <br />e All bartenders and servers must stop serving alcohol at closing time <br />Operation Guidelines <br />1. No persons allowed under the age of 21 after 9:00 p.m. <br />2. All guidelines must be followed Friday and Saturday nights <br />3. All guidelines must be followed on all major holidays and special events <br />(Ex: New Years Eve, St. Patrick's Day, Fat Tuesday or Mardi Gras, and I-Ialloween) <br />4. All guidelines are set up when approximately 100 or more customers are being anticipated <br />5.
