BUILDING DESCRIPTION <br />Kitchen/Cafeteria Improvements <br />Several deficiencies have been identified including those associated with the anticipated <br />expanded capacity of the institution and need to accommodate a greater volume of meals. <br />Reduced "recreational cooking" and related canteen reductions further impacts these needs. <br />Areas for improvement include serving line, dishroom, pot and pan room, bakery, storage, <br />cooking equipment replacement and a staff break room. <br />Page 61 <br />
