Item 08A <br />Attachment 3 <br />"Kusina" — Filipino Flavors <br />Kusina is a creation by Award Winning Chef, Jailin Tabares, from Toledo City, Cebu, <br />Philippines. Her mastery of family recipes handed down from generation to generation <br />of sustainable organic cooking brings her great pleasure in offering traditional Filipino <br />foods to you and the Twin Cities. <br />In brief, Filipino food is characterized by the combination of three flavors Sweet <br />Sour — Salty. Compared to other Southeast Asian countries, spices and heat do not <br />figure as prominently as in traditional Filipino cuisine. Garlic, Ginger, Bay Leaf, and <br />Black Pepper most often used along with Fish, Soy sauce and Shrimp paste. <br />Kusina will be situated inside Filipino Village Grocery Store located 2408 County Road I, <br />Mounds View, MN 55118 serving hot ready to eat meals with limited seating <br />indoor/outdoor for purchased foods. <br />Kusina will also be the named commissary kitchen for Inday's Kitchen Food Truck, <br />currently licensed by MN Department of Health in Dakota County servicing the area <br />Twin Cities food truck events. <br />
