The Design Partnership, Ltd. <br />Architecture / = OF <br />1 R: <br />Interiors now <br />August 6, 2020 (Revised 9-09-2020) 11 <br />City of Hugo EST. 1972 <br />Emily Weber, Community Development Assistant <br />Re: Grundhofer's Old Fashion Meats <br />15449 Forest Blvd. N <br />Hugo, MN 55038 <br />Dear Emily: <br />Grundhofer's Old Fashion Meats is proposing an addition to their existing building at 15449 Forest Blvd. <br />The addition will be 2,450 SF, added to the East end of the current structure of 2,880 SF, and will abut <br />the existing garage structure on site. <br />The use of the addition will be to receive product, move it into a freezer or cooler in the space, to be <br />ready for further processing. In the future it will also be an expansion of their processing. <br />We understand that this work will require an amendment to the existing Conditional Use Permit, for <br />their processing of non -inspected USDA meats. This is the processing of deer, which takes place from <br />late September through December of the year. The City code states that this function shall not exceed <br />the floor area of the meat market function. The proposed addition will move what currently takes place <br />outside - the receiving, skinning and placement of deer carcasses into the cooler- to inside the building. <br />The processing of the deer will not increase in floor area. <br />We are requesting a variance to the 30-foot side yard setback. The addition will extend approx. 18 feet <br />into the setback at its SE corner and 8 feet at its SW corner. We are connecting the two existing <br />buildings, both of which are within this setback. The existing interior layouts of the two buildings and <br />new addition dictate that the south walls line up for best interior function. <br />Exterior finishes for the proposed addition will be a concrete masonry unit (CMU) base and EIFS panels <br />above. The CMU base will be an architectural finished block, integrally colored. The existing building to <br />the west (primary structure) will be painted with complimentary colors. The primary structure will <br />connect to the new structure via the curved bowstring truss roof butting into the EIFS panel wall, which <br />will be slightly taller than the bowstring. The existing structure to the east will retain the steel siding <br />finish.
