Aarthun Enterprises, LLC
September 30, ?008
Mayor and City Council of Little Canada
515 Little Canada Road
Little Canada, MN 55 1 1 7-1 600
Re: On-Sale Liquor License Request
Dear Mayor and Council Members:
Aarthun Enterprises, LLC d/b/a Taste of Scandinavia Bakery and Cafe is a locally owned and
operated Company. We currently operate cafe locations in North Oaks and Bloomington, as well
as a wholesale manufacturing facility and cafe within the city of Little Canada. Our operation in
Little Canada is by far our largest, employing approximately fifty associates.
The purpose of this letter is to ask the Council to consider increasing the number of on-sale
liquor licenses the City of Little Canada issues. Why? As you know, the City limits the number
of on-sale licenses it issues each year to five. That limit has been met for the 2008/2009 yeat•.
As a result, Aarthun Enterprises is not able to apply for an on-sale License.
Aarthun Enterprises has a significant business interest in obtaining an on-sale license. By doing
so, our catering business would be able to satisfy our numerous customer requests for supplying
and serving alcoholic beverages at our catering events. Today, we are not able to meet these
requests as Minnesota law requires us to hold a caterer's permit, which may only be obtained by
anon-sale liquor license holder.
We have chosen not to apply for an on-sale license with the cities of North Oaks and
Bloomington because the facilities we own within those municipalities ai•e not able to handle
large catering operations. Our Little Canada facility is best equipped to handle our catering
business.
In closing, I ask that you consider our request. I, along with a member of ow• operations team,
will be attending the city council meeting on October 8°i to address our request in person and
answer any questions you might have regarding our operation.
Respectfully yours,
Christopher Thienes
Director of Human Resources
Corpo~~ate Offices • 1 I !Bast County Road F • Vndnais 1{eights, MN SS 127 • (6S I) 483-9242 • (Pax (6> 1) 483-0622
