Staff will make sure patrons do not linger or loiter around the sidewalk areas or their vehicles or playing <br />loud music. Controlling this will ensure that other lessees are not disturbed. Staff will also clear loiterers <br />from the sidewalks between the business and the parking lot. Security will call 911 to ensure these <br />persons are kept away. <br /> Exiting duties <br />All staff shall practice at least once a month fire drills and implement strategies suggested by the fire <br />department for quick safe exiting. In case of an emergency cooking staff shall turn off the main gas <br />valve in both cooking areas and the head cook will make sure all employees leave through the safest <br />kitchen exit. Staff, the owner, and wait staff shall direct customers out to the front or side exits. <br />Staffing Model <br />Owner: Owner oversees all operations of the business. He observes the preparation of food for all <br />menu items. He oversees all cooking and refrigeration temperatures. He oversees that inventory is not <br />low. He and the manager oversee the staff. They train staff. They train staff as to procedure’s that need <br />to be complied with to maintain consistency of flavor in foods such as meats, rice and other foods <br />offered by the business. The owner and manager settle issues with staff and issues with customers. The <br />owner does the buying of meats, produce and other food stuff daily. <br />Manager: Oversees the staff under her. Assistant cooks, assistant preparation and salad preparers. She <br />supervises employees in the food preparation and dishwashing areas. She supervises the dining room <br />floor and sales of alcohol. Answers questions of employees and teaches them procedures to be taken <br />with soup preparation, sauce preparations, handling of spices etc. Deals with salespersons, orders food <br />stuff. Supports the owner. Keeps track of cleanliness of restaurant area and outside. Supervises the <br />hostess on sitting customers. Asking for Id at the table before food is ordered. The manager may double <br />check id approvals before alcohol is delivered to a table. The manager upon any emergency medical <br />situation must call for an ambulance so that the customer or employee gets medical attention. Staff <br />must also be instructed on choking procedures and mouth to mouth resuscitation. <br />The manager will insure that employees never drink alcohol during normal business hours. Staff <br />drinking on the job or on the premises will be fired. Staff is also not allowed to drink beer when the <br />business closes for the night. Only employees must be inside the business at closing. Friends, partners <br />and spouses must wait outside for the employee. <br />Maintenance The maintenance person will empty all trash cans during the day. He will take trash to the <br />garbage container as soon as possible. He will constantly clean and check the bathroom and mop sink <br />area throughout the day. <br /> The small operation of this business will not adversely affect any community person or business. In any <br />case, if there is a potential problem, we will work with our neighbors to correct the problem. Litter and <br />outside trash will be cleaned up several times a day.
