1 Councilmember Faust said that the Council should look at what the private sector is
2 charging for private parties and also to ask cities that have similar facilities. DISCUSSION OF PLANS FOR THE STONEHOUSE AND REVIEW PROFIT

4 PLAN FOR ENTIRE OPERATION.
25 Mike Larson, Liquor Operations Manager, reviewed with Council plans for repairs that
26 need to be done for the Stonehouse and SAV I. He indicated that the HVAC and air
27 purification systems are in critical need of being replaced. He said that of the three
28 HVAC units, the newest one is 27 years old; the others are about 40 years old. He
29 indicated that SAV I is in need of general renovation; new shelving, new lighting and
30 painting.
31
32 Larson also presented the Performa for the entire operations. He indicated that if the
33 HVAC at the Stonehouse and SAV I fails, the cost to replace it would obviously impact
34 the Performa. Councilmember Cavanaugh stated that the projected profit looks great.
35
36 Larson reported that the food menu is going well. Because of a change in the cooking
37 staff, he said the Stonehouse is in a position to increase the menu options. He stated
38 that the trend in the industry seems to be a change in emphasis; establishments similar
39 to the Stonehouse are shifting from focusing on serving beverages with food on the side
40 to improving the food menu and serving beverages as an aside.
41
42 Councilmember Thuesen stated that smoke is a problem and agreed that most of the
43 needed repairs are cosmetic but felt that if the HVAC systems were replaced and the
44 repairs done, the changed atmosphere of the Stonehouse would be a way to improve
0 45 business. Larson agreed, stating that the repairs would go a long way to improve the
46 image to the public.
2
